Sunflower /Helianthus annus, a plant in the Aster family, has long been cultivated for food (entire seeds ground or sprouted), oil (pressed out of seeds) and dye (petals and pollen). Scientists have traced the origins of the sunflower being adapted to agriculture to at least 3,000 BC in present-day Mexico. A few varieties of heirloom seeds are still in human circulation, and need to be grown out regularly if we wish to preserve the genetic diversity of this invaluable and culturally important plant.
